New Touch: Amazing Noodles Yamagata Chicken Chinese-Style x 5 servings

This soy sauce-based soup features a chicken bone broth foundation, enhanced with bonito and kelp extracts and powdered sardine bonito flakes for a rich dashi flavor reminiscent of soba dipping sauce. Toppings include fried tempura bits, chicken, green onions, chopped nori seaweed, and pepper. We use our proprietary non-fried noodles. Characterized by a smooth surface and chewy, springy texture inside, they pair well with the soup and resist overcooking. This recreates the beloved Yamagata Chicken Ramen from Yamagata Prefecture. Since it’s enjoyed chilled locally in summer, we developed it to be delicious both hot and cold.
